Vineyard and terroir
The fruit comes from organically managed vineyards in the province of Trapani, at 350 m above sea level. The area lies on Sicily’s western coast beside the Tyrrhenian Sea and has a Mediterranean climate, with mild winters, limited rainfall—particularly in August—and very hot, windy summers. The soils are mineral-rich clay and limestone.
Vinification
The grapes are harvested relatively late, in early October. They undergo partial maceration at low temperature, followed by alcoholic fermentation in temperature-controlled stainless-steel vats.
Ageing
The wine matures for four months in stainless-steel tanks.
