Vineyard and terroir
The Nebbiolo comes from the Roero area, in the municipality of Canale d’Alba. The vines are trained to Guyot and yield 8,000 kg/ha.
Grapes
100% Nebbiolo.
Vinification
The grapes undergo white-wine vinification, including destemming and soft pressing. Fermentation follows under strict temperature control at 10–12°C.
Ageing
The wine remains on fine lees for 2–3 months, with the natural yeasts kept in suspension to encourage further aromatic extraction. It is then racked and filtered for clarity and the intended colour before bottling.
Tasting profile
Pink with yellow-gold and orange reflections. The intense aroma combines red fruit, peach and apricot. The palate is fruity and fresh, medium-bodied, slightly dry and persistent.
Serving and pairing
Serve at 6–8°C. It accompanies starters and pasta dishes as well as fish and crustaceans and can also be served as an aperitif. Its character is at its best within the first two years.
