Vinification
After harvest, the grapes are placed in crates to dry naturally. During this period, they are affected by Botrytis cinerea (noble rot), an essential part of the wine’s production. The botrytized grapes are gently pressed between November and December, then fermented in French oak barrels.
Ageing
The wine matures in wood for about one year, followed by a further year in bottle.
Label / history
The Italian word “brolo” means “vineyard” and was used mainly in the Middle Ages for an orchard enclosed by a stone wall. “Passoni” derives from Antonio Passioni, an ancestor of the current owners who founded the family estate in 1860.
