Vineyard and terroir
The grapes come from a 1.30 ha vineyard with southern and south-western exposure. The vines average between 10 and 45 years old, growing in marl soils with layers of clay.
Vinification
The grapes are harvested by hand at peak ripeness, usually at the end of September. They are gently pressed in a pneumatic press, and the juice is cold-settled to separate it from the sediment. Fermentation takes place in oak barrels.
Ageing
The wine ages in oak barrels. The separate portions are blended two weeks before bottling.

Lively acidity and a fresh mineral character.
Label / history
“San Zuan” is the local Friulian name for the nearby village of San Giovanni.
