During the 1980s, as Verdeca was disappearing from the market, Mino Calò chose the native variety to answer demand from restaurants specialising in fish. Bolina emerged toward the end of the decade as a fresh, aromatic white made entirely in steel, contrasting with the barrel-aged styles then in fashion.
