Grape harvest at Salatin

Harvest completes a full year of vineyard work and begins the transformation of grapes into wine. Picking is timed for the point at which sugar, acidity, ripeness and aromatic development are in balance. Climate and the distinct rhythm of each grape variety also influence the decision.

Selection is carried out strictly by hand. Family members pick the best bunches into wooden boxes, transfer the boxes to trailers and operate the tractors. From mid-August to mid-September, the entire Salatin family participates. Children begin learning to recognise varieties and distinguish the aromas, flavours and characteristics of the berries.

The harvest therefore functions simultaneously as practical work, a family celebration and a social and cultural ritual through which knowledge passes between generations.
