Grapes
Fuori Misura is made from Sangiovese, Canaiolo and Merlot, without published percentages. Part of the fruit is picked early; for the 2025 vintage, harvesting began in early September and continued during the regular harvest period.
Vinification
Most of the wine comes from must drawn from the vats used for Chianti Classico, Riserva, Percarlo and La Ricolma within 12–24 hours of the crushed grapes entering them. A smaller portion comes from early-picked Merlot, Sangiovese and Canaiolo vinified as white wine, with the skins removed to prevent maceration.
Fermentation proceeds slowly at temperatures no higher than 23°C. Approximately 15% destemmed fresh grapes are added, and the fermenting must is mixed daily. The finished wine receives a single light filtration, so natural sediment may develop in bottle. Sulphites are kept below 150 mg/L in accordance with the stated organic-wine limit.
Ageing
The 2025 matured for five months in stainless-steel tanks and was bottled on 4 February 2026.
Technical data
The 2025 contains 14% alcohol, less than 1 g/L residual sugar, 6.63 g/L total acidity, 0.48 g/L volatile acidity and 23.7 g/L net dry extract; pH is 3.17. Production was 9,844 bottles of 750 ml.
Tasting profile
Dark rosé in colour and medium in concentration, with an intense body and fresh, fruity aromas.
Serving and pairing
Serve at 7–8°C. The recommended drinking period for the 2025 vintage is 2026.

The first vintage was 2015.
