A Friulian summer Spritz

The article proposes a drier, aromatic alternative to the conventional Spritz, combining equal parts Vermut Ambrato SI and Perlae Zero Prosecco DOC Brut Nature.

Vermut Ambrato SI is based primarily on wine from Fleurtai, a disease-resistant variety derived from a cross involving Tocai Friulano, with a small proportion of Pinot Grigio. It is infused with 20 herbs and spices, including chamomile, clary sage, gentian and wormwood. Burnt sugar, rather than colouring agents, gives it its amber colour. Its development took several months.

Perlae Zero contributes a dry sparkling component with no residual sugar. To prepare the drink, fill a glass with ice, add one part vermouth and one part Prosecco, stir gently and garnish with a slice of untreated lemon. The result is presented as a balanced aperitif combining bitterness, aromatics, freshness and effervescence.
