Vineyard and terroir
The grapes grow in a 1 ha organic vineyard in La Zingarina, in the province of Rimini. The vineyard has yellow clay and limestone soils and is exposed to a constant exchange of air currents from the Adriatic and the Alps. Planting density is 4,000 vines per hectare.
Vinification
The grapes are harvested by hand in early September and sorted twice: first in the vineyard and again at the winery. Whole bunches are pressed, and the must settles at low temperature before fermenting in stainless-steel tanks for two weeks. The wine is lightly filtered before bottling and is not fined.
Ageing
The wine rests on its fine lees in stainless-steel tanks for eight months.
