Grapes
Ceragiolo is a varietal red made from 100% Ciliegiolo grown organically. The fruit is selected from mature vines with low production per plant. Although Ciliegiolo is commonly used as a blending component, here it is vinified on its own.
Vinification
Fermentation takes place in stainless-steel tanks for 20 days under controlled temperature conditions.
Ageing
The wine matures for 12 months in French oak and then spends a further 12 months ageing in bottle. The main description refers to barriques, while the technical sheet specifies tonneaux.
Technical data
Toscana IGT red wine. Alcohol: 13.0% vol. The colour is an intense ruby red approaching garnet, with violet reflections.
Tasting profile
The bouquet combines spice and black pepper with notes of cherry and raisins. The palate is strong, dry and velvety, with noticeable tannins, a structured character and an intense, persistent finish.
Serving and pairing
Decant for 30 minutes before serving. Pair with first courses based on red meat.
Label / history
Ceragiolo is a historic label for Fattoria Santa Lucia. Its name evokes the cherry fruit associated with the Ciliegiolo variety.
