Grapes
The current technical sheet specifies organically grown Sangiovese, Canaiolo and Ciliegiolo: 60% Sangiovese, 20% Canaiolo and 20% Ciliegiolo.
Vinification
Fermentation takes place in stainless-steel tanks for 20 days at a controlled temperature of 24–26°C.
Ageing
The wine matures for 14 months in French oak tonneaux, followed by another six months in bottle.
Technical data
IGT red wine produced and bottled at the estate in Pontedera, Tuscany. Alcohol: 14.0% vol. The colour is a lively, intense brilliant ruby red, marked by luminosity and depth in the glass.
Tasting profile
The bouquet opens with light leather and tobacco notes enriched by a suggestion of black berries. The palate is soft, well structured and balanced, with a persistent finish. Its aromatic character is intended to recall the wines of the Etruscan Coast and the maritime breezes that reach the estate’s vineyards on summer evenings.
Serving and pairing
Decant for 30 minutes before serving. Pair with red meat, cured meats, cooked cold meats, dishes with red sauce, or white meat.
Label / history
CheRubino was the most recent label created from the estate’s grape varieties and was presented to the public on the night of San Giovanni, 24 June 2014. It was conceived as the top wine of Fattoria Santa Lucia and as an expression of the estate and its surroundings.
