Vineyard and terroir
The fruit is hand-harvested from small terraced vineyards on Pantelleria. The vines grow in volcanic soils under harsh island conditions, with constant sea winds and an oceanic climate. These conditions promote even ripening and contribute complexity, depth and a distinctive texture.
Vinification
Fermentation proceeds without additives in open, 600 L Spanish terracotta amphorae that are 400 years old and buried in volcanic tuff.
Ageing
The wine remains with the grape skins in the same amphorae for seven months.
Tasting profile
Complex and deep, with a distinctive texture and a style that varies with the character of each vintage.
