Vineyard and terroir
The grapes come from organic vineyards on the hills of Carso, near the Slovenian border. The dry, rocky red soil is rich in limestone and iron compounds.
Vinification
The grapes are harvested by hand, carefully transported to the winery and pressed. The juice ferments spontaneously with native yeasts in contact with the skins. The wine is bottled without filtration.
Ageing
The wine matures for 12 months in large oak barrels.
