Vineyard and terroir
The Pignolo vineyard lies on a south-facing hillside in Rosazzo, at approximately 160 metres above sea level. Its marl-and-sandstone soils are planted at a density of 4,000 vines per hectare. The vines were planted in 1996 and are trained using the Guyot system.
Grapes
100% Pignolo.
Tasting profile
The wine has a deep, intense ruby-red colour with violet nuances. The powerful aromatic profile combines plum, violet, cherry and mulberry with cocoa, coffee, leather, vanilla and spices. These aromas carry through onto the palate, where fruit, tannins and balanced acidity shape a powerful, strongly individual Friulian red.
Serving and pairing
Serve at 16 °C. Pair with hairy game such as wild boar, chamois, roe deer or venison, as well as beef cheek, stewed pig’s trotter and mature cheeses.
Label / history
Pignolo has been present in Friuli for several centuries and traces its origin to the vineyards of the Abbey of Rosazzo. Its low yields and susceptibility to powdery mildew caused it to fall out of favour in comparison with more resistant and productive varieties. Following guidance from Walter Filiputti, the final two surviving vines were located, and new plants were propagated from them beginning in 1978. The variety favours dry, marl-rich sites with southern exposure; its grapes are distinguished by abundant tannins, high sugar concentration and deep colour. The wine can mature for more than 20 years.
