Vineyard and terroir
The Sangiovese is grown in the vineyards of the San Leonino estate.
Vinification
The grapes are harvested by hand at optimal ripeness, usually in September, then gently pressed and vinified. After the initial fermentation, a small quantity of dried grapes is added to the must, initiating a secondary fermentation in 90-hectolitre oak casks that continues until the following spring.
