Vineyard and terroir
Vereto takes its name from the Negroamaro vineyard at Tenuta Iore in San Pancrazio Salentino, in the province of Brindisi. The 30-hectare vineyard has a north–south orientation and limestone-clay soils. Vines are trained as traditional bush vines and bilateral spurred cordons, with average production of 1.5 kg per plant.
Grapes
100% Negroamaro.
Vinification
Harvest takes place during the second ten days of September and combines manual and mechanical picking. Fermentation proceeds under controlled temperature for 7–10 days, followed by a brief post-fermentation maceration. Malolactic fermentation begins spontaneously after alcoholic fermentation.
Ageing
The wine matures first in stainless-steel tanks, then spends 6–8 months in 50 hL Slavonian oak barrels and approximately 12 months in cement vats. Bottle ageing lasts a further 6–8 months.
