Vineyard and terroir
The Merlot, Cabernet Sauvignon and Cabernet Franc come from several vineyards in the Veronese area, at 450 m above sea level. The vines are 15 to 50 years old.
Vinification
Harvest takes place in the first week of September. The grapes are placed in small wooden crates and taken to the winery, where they dry naturally for 3 months. In December they are carefully selected and pressed in special truncated-cone-shaped steel vats. After about 10 days of maceration, fermentation begins with selected yeast. Over the next 30 days the must is pumped over frequently and the cap is punched down by hand. The juice is then moved to a steel tank for settling. About 20 days later it goes into wooden vessels, where fermentation is completed.
Ageing
The wine ages for 64 months: 40 months in new 2.25 hl barrels, then 24 months in large 25 hl barrels. After bottling it rests a further 8 months in the winery's cellars before release.
Vintage notes
2015: Veneto had a very warm winter and spring, with above-average temperatures, followed by a very dry summer. Water shortage stressed the vines and raised polyphenol and sugar levels. Harvest began about 10 days earlier than usual. Vines that coped well gave grapes of excellent ripeness, though yields were about 10% lower. The best wines of the vintage proved mature and stylish, with potential for long ageing.
