Vineyard and terroir
The Pinot Grigio is grown using organic methods in vineyards in the province of Pavia.
Vinification
The grapes are harvested entirely by hand. Fermentation takes place at low temperatures with natural yeasts, and sulfur dioxide is used minimally.
Tasting profile
A light, classic Italian white, fresh and very easy to drink, with pleasant notes of fruit and herbs. The taste is light and beautifully balanced; the wine is clean, fresh and fruity.
Serving and pairing
Suited to the aperitif. It also pairs with Italian Minestrone soup, omelets, fish, seared scallops on a green salad with grapefruit wedges, and classic Pasta Primavera.
