Vineyard and terroir
The Cabernet Sauvignon and Marzemino are grown on hillsides in Veneto without pesticides or herbicides.
Vinification
The grapes are harvested entirely by hand. Maceration and fermentation take place in stainless-steel tanks for 7–10 days. A second fermentation then occurs in the bottle with the natural yeast sediment. The wine is unfiltered.
Ageing
Further ageing on the lees takes place in the bottle, where the sediment continues to develop.
Tasting profile
Balanced and aromatic, with rustic, fresh aromas. Mixing the sediment through the wine gives a more pronounced flavour.
Serving and pairing
For a clear pour, allow the sediment to settle; for a cloudy pour with more pronounced flavour, gently shake the bottle. Pair with simple dishes.
Label / history
“Col Fondo” is Riccardo Zanotto’s range of unfiltered wines. His work on the range began more than fifteen years ago with a sparkling Col Fondo, then called “sur lie,” meaning “on the lees.” He helped revive “col fondo,” a term from the Venetian dialect associated with tradition and unfiltered wine. The bottle is sealed with a crown cap.
