Vineyard and terroir
The grapes are selected in the hills of Veneto and grown without pesticides or herbicides.
Vinification
The fruit is harvested entirely by hand. The wine is unfiltered and made by the traditional Ancestral Method, with secondary fermentation taking place in the bottle on its natural yeast sediment.
Ageing
Further ageing on the lees allows a layer of sediment to continue developing in the bottle. The wine is sealed with a crown cap.
Tasting profile
Elegant and well structured, with persistent foam, lively bubbles and a bright, distinctive taste. Ageing on the lees contributes rustic, fresh aromas.
Serving and pairing
For a clear pour, allow the sediment to settle. Gently shake the bottle for a cloudy pour and a more pronounced flavour. Pair with simple dishes.
Label / history
“Nude” belongs to Riccardo Zanotto’s “Col Fondo” collection of unfiltered wines. His work with this style began more than fifteen years ago with the sparkling wine “Col Fondo.” The wines were initially called “sur lie,” meaning “on the lees”; Zanotto and other producers revived “col fondo,” a term from the Venetian dialect associated with wines retaining their sediment.
