About this wine
Vineyard and terroir
The Nerello Mascalese grows on volcanic soils low in organic matter and rich in trace elements. The vines average 20 years of age and are farmed organically and biodynamically, without chemical fertilizers or synthetic products.
Vinification
The grapes are harvested by hand during the last ten days of September, then destemmed and pressed. Fermentation takes place on the skins in stainless-steel tanks with native yeasts. Maceration lasts about 15 days, adjusted according to the desired depth of colour.
Ageing
The wine ages for 12 months in stainless steel, followed by 18 months in old tonneaux. It settles naturally and is bottled without filtration.
