Alvaro Palini

Alvaro Palini encountered viticulture through his grandfather and the vineyard at the Bevagna orphanage before becoming a tailor in Paris. When Domenico Adanti brought him an early wine, Palini rejected it bluntly and was eventually challenged to take responsibility himself. He reorganized pruning, lowered excessive crops, selected clusters individually and fought resistance from workers accustomed to undifferentiated harvesting. He treated balance as a vintage-specific judgment rather than a simple race toward minimum yields. In the cellar, different vineyards were vinified separately, matured in large casks, tonneaux and a small number of barriques, then assembled after Easter in large oak. Following Domenico’s death, Pietro, Donatella and Daniela carried the family business forward. Palini later supervised his son Daniele while insisting that Sagrantino’s tannin should be moderated without erasing the variety’s identity.
