The feature follows Domenico Adanti’s early experiments with dry Sagrantino and Alvaro Palini’s return from Paris to Bevagna. Palini reorganized vineyard pruning and harvest selection, lowered excessive yields and revised vinification and ageing to balance fruit, acidity and the grape’s powerful tannins. It identifies 1980 as the first Adanti Sagrantino and describes an estate producing more than 150,000 bottles annually in 2014. Half remained in Umbria, around 30% went to international markets and the balance to the rest of Italy. Pietro, Donatella and Daniela represented the family management of that period; Daniele Palini had succeeded Alvaro operationally, Maurizio Castelli was identified as oenologist, and Alvaro continued supervising.
