Cabreo takes its name from the old Tuscan tradition of illustrated property inventories, while Il Borgo honours Montefioralle, the village overlooking the vineyards. After a late-1970s journey to the Côte d’Or and the viticultural institute at Beaune, Ambrogio Folonari obtained propagation material for Cabernet Sauvignon, Merlot, Pinot Noir, Chardonnay and Sauvignon Blanc. A Californian technician supervised grafting onto Sangiovese vines at a Panzano property acquired for this purpose. Cabreo Il Borgo emerged as a 70% Sangiovese and 30% Cabernet Sauvignon–Merlot cuvée. The first vintage was 1982 and sales began in 1985. Refinement during the 1980s and 1990s focused on structure, concentration, elegance and precision; further changes from 2015 to 2020 sharpened aromatic definition and fruit–oak balance. The 2022 edition represented the 40th harvest and carried a commemorative label.
