About this wine
Vineyard and terroir
The grapes grow in the province of Pavia in northern Lombardy. Vineyards become more concentrated south of the Po in Oltrepò Pavese, whose foothills lie between the Apennines and the river. The nearby Po and well-drained soils rich in clay and limestone marl shape the local microclimate.
The vines are at least 35 years old and are farmed according to organic and biodynamic principles, without copper or sulfur treatments. Yields are kept below 30 quintals/ha.

Giorgio Mercandelli chooses not to disclose the individual varieties in the blend.
Vinification
The grapes are harvested entirely by hand at optimal ripeness. Fermentation uses native yeasts in inert, high-silicon ATLAC resin vessels. Skin maceration can exceed 120 days. The wine is bottled without fining, filtration or added sulfites.
Ageing
The wine rests in bottle for 5–7 years. Mercandelli considers this extended period necessary for its sensory character to emerge after bottling.
Serving and pairing
Decant for 1–2 hours before serving. Once opened, the wine can retain its aroma and flavour for months.

Production was limited to 2,000 bottles.
