Cellars Open to the Future: How the Winery Visit Is Changing Through Design, AI, and Sustainability
Fattoria del Cerro is presented as an example of a contemporary winery in which production, architecture, landscape and hospitality are integrated. The estate lies at Acquaviva, overlooking an amphitheatre of hills descending toward the Valdichiana, with Montepulciano and Chianciano on the horizon.
The enlarged winery uses pigmented stainless-steel tanks, concrete, travertine and natural light in the vinification hall. A suspended walkway allows fermentation and other production stages to be observed from above. The barrel cellar and barrique room provide a quieter maturation environment, with concrete contributing to suitable conditions and a ceiling shaped to evoke the Sienese hills. A small private tasting room occupies the heart of the winery, while the main tasting room opens onto a terrace above the vineyards.
The account also reviews the AI optical sorter introduced at Fattoria del Cerro. It analyzes berries in real time at grape reception, distinguishing intact, ripe fruit from rejects. It complements manual sorting and creates greater consistency across volumes too large to manage only by hand. Emanuele Nardi emphasizes that the winemaker still defines the selection parameters.
The estate’s sustainability program includes Equalitas certification, participation in the Consorzio del Vino Nobile’s environmental project, optimized water use, rainwater collection, precision agriculture to reduce phytosanitary treatments and sustainable management of winemaking by-products. Social commitments include non-discrimination, worker protection, training, welfare and access for young people to employment in the wine sector.
