May brings vigorous vineyard growth and requires close attention to every row. Wild grasses remain between the vines, where their roots protect the soil from erosion during increasingly frequent heavy rainfall and create habitat for beneficial insects.

Alternating rain and sunshine accelerate shoot growth, so Gianni and Dario guide the vines through measured green pruning. Excess shoots are removed, but more leaves are retained than in the past. This fuller canopy acts as a natural umbrella against increasingly torrid summers, shielding bunches from intense sunlight and helping preserve grape acidity and freshness.

Organic protection excludes synthetic chemicals. Copper and sulfur provide the foundation, with algae and zeolite added to strengthen the vines’ natural defences.
