From Etna and Pantelleria, the new Donnafugata olive oils

The new Biancolilla extra virgin olive oil extends Donnafugata’s Pantelleria production beyond wine while retaining the island’s characteristic low, wind-resistant agriculture. Biancolilla olive trees are cultivated on terraces and pruned horizontally close to the ground for protection from strong winds.

The olives were harvested manually during the second ten days of October. They were cold-milled, with malaxation in a controlled atmosphere to limit oxidation and preserve aromatic freshness. The resulting oil has light fruit intensity, with notes associated with ribbed tomato, aromatic herbs, rosemary and thyme. It was released in a 500 ml bottle featuring a woman-olive-tree figure as a symbol of serenity and well-being.
