About this wine
Vineyard and terroir
The Pinot Bianco comes from vines aged 10–20 years at the foot of the Mendel Mountains, above the centre of Caldaro. The vineyards grow on calcareous moraine soil and yield 50 hl/ha. The Puntay range is cultivated largely by hand with an emphasis on environmentally respectful farming; within the range, all wines other than Pinot Nero and Lagrein are certified organic.

Vinification
Whole clusters are softly pressed. After settling, the must is transferred to stainless-steel tanks for a very slow fermentation with selected yeasts. When residual sugar reaches 18 g/l, the still-fermenting must/wine is bottled in sparkling-wine bottles, where fermentation continues and creates the effervescence.
Ageing
Following the prise de mousse, the wine remains on its lees in bottle for approximately six months. It is subsequently disgorged; the production description specifies the end of February 2024.

Tasting profile
A particularly clean aromatic profile combines crisp white fruit with delicate balsamic nuances. The palate is fresh, saline and highly approachable. Its bubbles are very fine despite the relatively short period spent in bottle after the prise de mousse.
Serving and pairing
Serve at 6–8 °C. It is suited to oysters and raw seafood, crisp vegetables with dips, or service as an aperitif.
