About this wine
Vineyard and terroir
The grapes come from 25-year-old vines on clay-limestone soils. The vineyards are farmed organically but are not certified.
Grapes
Dolcetto is complemented by a small proportion of Nebbiolo.
Vinification
The grapes are harvested by hand at optimal ripeness, destemmed and macerated for three weeks. Fermentation takes place in homemade porcelain and ceramic vessels. No sulfur is added.
Ageing
The wine remains in the porcelain and ceramic vessels for at least six months.
Label / history
The handmade paper label bears handwritten details of the bottle number and the total production.
