Florio, liquid art in motion
More than 3,000 old and new oak containers occupy four climatic environments. Through repeated tasting, the oenologist may move a container toward the sea, where lower temperature and higher humidity favour brackish character, or toward the warmer, drier upper reaches of the cellars to encourage concentration and complex tertiary notes. The wines respond to hot summers, rainy winters and warm sand-bearing winds. Evaporation varies with temperature, humidity, time and container size and is quantified as Angel’s Share on New Geography labels. This physical movement through space and gradual movement through time form Florio’s concept of liquid art.
