The Marsala coast and the vineyard
Grillo grows north of Marsala near the Stagnone lagoon, the salt pans and the sea. Vines are trained low as alberello or on counter-espalier systems in strong, non-irrigated soils. The proximity of the salt pans contributes salinity. Manual green pruning removes selected vegetative parts, allowing suitable light and air around the bunches while balancing leaf area and crop. Véraison begins with berry enlargement and falling acidity; heat in late July and August completes sugar and phenolic ripening ahead of the September harvest. Vineyard management also controls quantities per hectare within the Marsala production rules.
