The Guyot Method

Each vine retains a fruiting cane and a renewal shoot. The fruiting cane is tied horizontally and generally carries 8–10 buds, while the renewal spur retains two. The trained canopy rises approximately 1–1.5 metres above a trunk 60–80 cm high.

Proximity to the ground helps vines at higher elevations benefit from soil warmth, while greater height on lower slopes can reduce humidity and spring-frost exposure. The system also facilitates pruning and harvest, improves leaf exposure, permits useful planting density and supports vine longevity while balancing crop quantity and quality.
