Primitivo from flat vineyards in the countryside of Manduria and Sava, rooted in terra rossa and trained as alberello.

Vinification
Harvest takes place in late August. Bunches are picked by hand into plastic crates, carefully selected and transported in an isothermal refrigerated truck. A second selection is carried out on a sorting table before destemming and gentle crushing. Maceration takes place in a 70 hL stainless-steel tank, with 2–3 weeks of skin contact, temperature control of the cap and two délestages each day. The skins are pressed with a vertical hydraulic press.
Ageing
The wine matures in wood for approximately nine months. It is bottled without fining agents or induced tartaric precipitation, then rests for about six months before release.
Label / history
The name refers to Freud’s concept of the id: instinct and unrestrained passion, beyond rules, time, logic and morality, governed by the pleasure principle.
