Frades & Sa Panada – Porto Cervo
The cooperative collaborated with Pastificio Sa Panada of Oschiri and Frades – La Terrazza in Porto Cervo on a project combining Giogantinu wines with traditional panadas. The partners shared an emphasis on tradition, continual improvement and the use of regional ingredients, with a younger generation helping lead the initiative.
The feature also marked Giogantinu’s 64th birthday on 13 July. It described the cooperative as a collective endeavour uniting more than 250 members — fathers, children and grandchildren — across vineyards extending from Berchidda to Oschiri.
The menu included pork panada with pea cream; vegetable panada with tomato and garden-vegetable gazpacho; artichoke-and-potato panada with almonds, mastic mayonnaise and beetroot; prawn-and-courgette panada with buffalo-mozzarella mousse; and turkey-and-pepper panada with gazpacho, hummus and celery.
