Maman Ludì – Berchidda

Giogantinu’s food-and-wine project visited Maman Ludì — The Seeds of Taste, a recently opened restaurant above Berchidda. Its name combines the initials of team members Luca Nieddu, Andrea Marzocchi, Asia Pianezzi and Mariella Sini. The setting, furnishings, service and menu were presented as a youthful expression of simplicity and harmony, with panoramic surroundings and a focus on local, seasonal ingredients.

The menu paired the cooperative’s wines with artichoke salad and Mustia ricotta; a savoury reinterpretation of brugnoli with Mediterranean sauce; linguine with oily fish and pecorino; roast lamb; and mackerel. The feature emphasized short supply chains, the reinterpretation of straightforward regional cooking and organic Vermentino as an expression of a return to careful grape growing and vinification.
