About this wine
Vineyard and terroir
The vines are 10–20 years old and grow in clay soils.
Grapes
The Minutolo grapes are also known as Fiano di Salento.
Vinification
The grapes are harvested entirely by hand during the first ten days of September. Fermentation takes place in stainless steel tanks at a controlled temperature of 15–16 °C.
Ageing
The wine rests in stainless steel tanks for 2–3 months.
Serving and pairing
Pairs with hot or cold appetisers and fish dishes.
