Centenario e Saraceno, antico tesoro da (ri)scoprire

The olive project grew from Salvo Foti’s connection with the Chiaramonte Gulfi area since the late 1990s and his friendship with olive specialist Sebastiano Giaquinta. Developed with Simone and Andrea over approximately three years, it centres on Tonda Iblea and a targeted acquisition of 161 century-old trees and 18 pluricentenary Olivi Saraceni. The fruit is separated into Centenario and Saraceno selections; the Saraceno trees follow a biennial harvest cycle. Salvo has requested a census to document the history and value of these old trees and encourage their protection.
