The 2022 organic extra virgin olive oil from Il Paradiso di Frassina

The estate’s Maremma olive grove contains about 80 Frantoio and Leccino trees, with Pendolino pollinators. Heat and drought reduced and stalled the crop, but mid-August rain, cooler temperatures and further precipitation restored ripening. Hand harvest began on 10 November. Four harvest days yielded about 1,200 kg of olives; immediate milling produced 200 half-litre bottles. Both field management and the mill were organically certified.
