The thinning of the bunches and the defoliation of the vine

Leaves were retained during peak heat to shield bunches, then partially removed as temperatures eased to improve light, ventilation and picking access. Thinning was delayed until ripening made weaker or disadvantaged bunches visible. Fruit positioned high above the production wire or far from the trunk was preferentially removed, balancing yield and maturity.
