Poli Distillerie: A Centuries-Old Identity in Ten Key Elements

Founded in Schiavon in 1898, the distillery traces its family roots to agricultural life beginning around 1410, followed by wine trading and distillation. Four generations have preserved knowledge and responsibility while employees are regarded as part of the extended family.

Production remains small-batch and personally supervised. The historic copper steam still works beside Athanor and Crysopea, allowing inherited methods and new technology to coexist. Diversification now extends to whisky, gin, brandy, vermouth, bitters and elixirs, all tied together by careful raw-material selection and a balance of character and elegance.

The two museums serve cultural and educational purposes and, together with the distillery, receive more than 150,000 visitors annually. Jacopo Poli has personally welcomed more than 4,000 students over four years. Responsible resource use is represented by Grappa itself: a winemaking by-product is converted into a finished spirit.
