About this wine
Vineyard and terroir
Picol Caveau is Sauvignon Blanc from San Lorenzo in Gorizia, on the right bank of the Isonzo. The warm, stony site lies on a calcareous gravel plateau at 60 metres above sea level. Ventilation of Balkan origin creates marked temperature shifts, giving the site notable potential for Sauvignon Blanc. The vines are more than 30 years old, Guyot-trained and planted at 5,200–5,600 vines per hectare. The vineyard is managed according to sustainability principles, using low-environmental-impact active substances.
Grapes
100% Sauvignon Blanc.
Vinification
The bunches are picked by hand and carefully selected. Fermentation takes place in stainless-steel tanks.
Ageing
The wine matures for 11 months on fine lees in a combination of stainless steel and wood, with frequent bâtonnage. Bottling is followed by further maturation in bottle. A limited number of bottles from selected vintages are kept under optimal conditions in the family caveau.
Tasting profile
The wine presents a clearly defined mineral character even after a shorter maturation period than other varieties. Its vertical, focused structure remains a defining feature with age.
Serving and pairing
Serve at 11 °C.
