Vineyard and terroir
The Cabernet Franc comes from selected plots at Finca El Paraíso in Maipú, Mendoza. The vines average 30 years of age and grow at an average altitude of 720 metres.
Grapes
100% Cabernet Franc.
Vinification
For the 2022 vintage, the grapes were hand-picked into 18–20 kg boxes. The fruit underwent bunch selection, destemming and berry selection. Cold maceration lasted five to seven days at 8–10°C. Fermentation took place in stainless-steel tanks at 24–28°C, with punch-downs and rack-and-return extraction.
Ageing
The wine spent 10 months in oak barrels, where malolactic fermentation occurred. It was then filtered and bottled, followed by at least six months of cellar rest before release.
Technical data
The 2022 vintage has 13.9% alcohol, total acidity of 6, pH 3.50 and 2.35 g/L residual sugar. Cellaring potential is 10 years.
Tasting profile
The 2022 wine is dark, intense ruby red. Fresh fruit is joined by liquorice-like spice and a herbal nuance recalling tomato leaf. Ripe-fruit flavours shape the palate, supported by tannins that are both soft and firm, balanced acidity, good structure and roundness. The finish is long and deep with a spicy trace. The current collection description further highlights pink pepper, black fruit, concentration, energy and fluidity.
