About this wine
Vineyard and terroir
The grapes come from Masseria Maìme at San Pietro Vernotico in Salento. The estate extends along the coast, with vineyards set between woodland and pine forest before the landscape meets the Adriatic Sea.
Grapes
Negroamaro, Syrah and Cabernet Franc.
Vinification
Each variety is harvested and selected by hand separately, then destemmed and gently pressed. The must is chilled to 12 °C for natural clarification before alcoholic fermentation in stainless-steel tanks at 16 °C.
Ageing
The separate parcels remain on their lees in stainless steel for several months. Following selection by tasting, they are blended, bottled and prepared for release.

Tasting profile
Delicate peach-blossom pink. The complex bouquet combines lychee, pink grapefruit, citron and passion fruit with jasmine and lavender. The palate is fresh and distinctly savoury, closing on a refreshing citrus note.
Serving and pairing
Serve at 10–12 °C with fresh cheeses, pasta in light sauces, delicate meats or fried fish.
