Pruning

Pruning during dormancy establishes each vine's permanent structure according to its training system and selects its fruiting cane or spur. Montecalvi limits bud numbers and controls vegetation according to leaf area and photosynthetic capacity. Decisions account for each vine, parcel and slope and are led by vineyard manager Yahya El Harchaoui under the guidance of Marco Pierucci.
