About this wine
Vineyard and terroir
The Grillo grapes grow in distinctive conditions near the coast.
Vinification
The grapes are harvested by hand and gently pressed. Fermentation takes place at 15 °C and lasts approximately 14 days.
Ageing
The wine ages at a controlled temperature in stainless steel tanks, followed by a further six months in bottle. The bottle ageing gives the palate greater brightness and brings out its expressive fruit profile.
Tasting profile
Authentic Sicilian character with an inviting fruity aroma and bright aromatic notes. The palate recalls the heart of summer under the Sicilian sun.
Serving and pairing
Seafood risotto is the suggested dish; its intense flavours match the wine's bright aromatic notes.
Label / history
The wine belongs to Paolini's Collezione Oro range, in which each wine is made from selected grapes and combines modern technology with traditional winemaking and cellar ageing.
