Cacc’e Mmitte is traced to a dialect expression associated with moving wine or must from one vessel to another, reflecting a communal wine intended for the table. Its identity comes from the interaction of Nero di Troia, Montepulciano, Sangiovese and Bombino rather than a single uniform formula.
The Lucera area is described as inland and hilly, with hot, dry summers, cold winters, calcareous soils poor in organic matter and meaningful day–night temperature changes. Nero di Troia contributes tannic structure, colour and ageing capacity; Montepulciano adds volume, Sangiovese freshness and acidity, and Bombino finesse and drinkability.
Quality begins with organic farming, low yields, targeted pruning, natural weed control, spontaneous groundcover and manual harvesting. Indigenous yeasts conduct fermentation, extraction is deliberately restrained, and maturation uses stainless steel or non-toasted wood according to the vintage. The wine is allowed time to stabilise and harmonise naturally, preserving vintage variation and its traditional role as a gastronomic red.
