Il vino rosso d’estate: Nero di Troia e Cacc’e Mmitte a tavola

The article challenges the habit of reserving red wine for cold weather. Nero di Troia retains energy when served at approximately 14–16°C because its tannin and acidity remain articulate at a slightly lower temperature. The estate connects this freshness to vineyards planted on a calcareous hill at about 300 metres, where summer nights are cooler.

Cacc’e Mmitte di Lucera DOC is presented as a wine of communal, rural origin. Its dialect name recalls the repeated removal and replacement of must or grapes during traditional shared cellar work. Paolo Petrilli interprets the denomination through three labels: the direct Motta del Lupo and the more structured Agramante and Ferraù.

Agramante, Ferraù and Il Guerro take their names from characters in Ludovico Ariosto’s Orlando Furioso, linking the range to the chivalric stories once transmitted by southern Italian storytellers. The article concludes with summer serving and pairing suggestions for grilled meats, roasted vegetables, fish, rosé and the estate’s traditional-method Pas Dosè.
