Pas Dosè e Motta del Lupo Rosé: i nostri vini leggeri dalle vigne di Motta della Regina

Pas Dosè and Motta del Lupo Rosé are presented as two contrasting interpretations of Nero di Troia. The traditional-method sparkling wine is made by harvesting earlier, vinifying as a white wine, inducing the second fermentation in bottle with cellar yeasts and ageing for years on the lees. It receives no dosage after disgorgement, which is performed bottle by bottle.

The rosé undergoes gentle pressing and no more than two or three hours of skin contact. It ferments spontaneously in the estate’s 10-quintal truncated-conical wooden vats and matures for several months in stainless steel. Both wines are certified organic and vegan.

The article also consolidates the estate’s principal production facts: 11 ha around the masseria, 300 m altitude, poor south-facing calcareous soil, spontaneous groundcover, 5,000 vines per hectare, yields of 50–90 q/ha, five local varieties, 1998 replanting on 420A rootstock, the first 2002 harvest and the 2015 return to wooden vats, indigenous fermentations and manual punch-downs. Seven labels account for fewer than 100,000 bottles annually. A final section explains the Motta del Lupo place-name and the Orlando Furioso references behind Agramante, Ferraù and Il Guerro.
