Passito di Pantelleria “Fuori Carta”: Pasqua Reimagines the Passito Tasting Experience

Presented at the Italian Embassy in Paris during Wine Paris, Fuori Carta challenged the convention of serving Passito only at the end of a meal. Sangue d’Oro 2018 and 2022 were matched with varied dishes, including Bruno Verjus’s chocolate cake with capers and caviar. The programme joined culinary reinterpretation to the preservation and contemporary promotion of Pantelleria’s wine culture. Hey French Fourth Edition and Fear No Dark 2020 were also presented as related expressions of the company’s experimental approach.
